Our filling is sweet, tender fresh Maine lobster meat and Parmigiano-Reggiano. These simple raviolis pack such a perfect flavor punch there's no need for a heavy sauce. Add Ravioli to boiling pot of water. The amount of salt in the water is very important, add approximately 1½ tbsp. of salt per 10-qt pot, and cook 6-8 minutes. Strain the ravioli, toss your ravioli in a small amount of olive oil to keep it from sticking and serve with your choice of sauce.

In lieu of a heavy sauce, we like to highlight the full flavor and texture of the ravioli. Melt some butter in a frying pan, add some sliced or minced garlic, a little bit of lemon juice & a dash of crushed red pepper flakes. Remove from heat and toss in your ravioli for a simple, yet profound pasta experience.
