With this high quality tuna, don't be afraid to enjoy simply raw, sushi-style. We STRONGLY recommend preparing tuna rare only. Cooking this high quality tuna anymore than rare will give you a dried out, tough piece of fish, rather than the desired delicate flavor. Use vegetable oil to coat a medium sauté pan and turn on high to get your pan as hot as possible without smoking your oil. Remember you want to cook your tuna quickly. Place tuna in your hot pan and sear until you begin to see white about 1/4 Inch on the bottom, and then flip to the other side.
