We highly recommend a cast iron skillet, or a stainless steel pan for this method as you will start on the stove top and end in the oven.
Preheat oven to 400 degrees. Preheat skillet or pan on high. Cover filet in a generous amount of kosher salt on both sides. Using vegetable oil, wait until your pan is ALMOST smoking. Sear filet on both sides for 5 minutes each. Once you flip the filet, add butter, tilt and baste filet in the melted butter. Check the internal temperature before removing from heat and putting in the oven. Check filet after approximately 5 minutes of being in the oven. We do not recommend cooking past an internal temperature of 155 degrees. Check filet after 5 minutes, and every 1-2 minutes after until desired internal temperature. Remove from pan and let sit 5 minutes before slicing. Enjoy.

Taking the filet out of the fridge for approximately 30 minutes before cooking helps it to cook evenly.
